This salad is made from all local Idaho ingredients, except for the celery. Many of the ingredients are from my garden 🙂 Woo hoo!
Handful of snap beans (from my garden), snapped
1 zucchini (from my garden), diced
1 red pepper, diced
2 vine ripened tomatos, diced
1 small head of celery (came from California, though it can be grown in Idaho if started inside in early March), diced
Handful of cherry tomatos (from my garden)
Handful of raspberries (from my garden)
5 basil leaves (from my garden)
3 mint leaves (from my garden)
Put the diced salad ingredients in a large bowl and mix up. Blend up the sauce ingredients in a blender until smooth. Pour the sauce over the diced salad.
